This is a variation of my zucchini pancake recipe. You can use different types of vegetables for this dish (zucchini, carrots, sweet potatoes, etc.). The consistency of the pancakes will vary depending on whether you shred or grate the veggies. I usually shred the vegetables with a box shredder. You can also use a food processor fitted with a blade that shreds. It’s simple to prepare and so delish!
2 cups finely shredded or grated cabbage
½ cup garbanzo (chickpea) flour
2 teaspoons fresh grated ginger
1 teaspoon curry powder
1 teaspoon salt (or to taste)
Olive oil or your favorite cooking oil
Put shredded cabbage into a medium-size mixing bowl. Add remaining ingredients. Mix well with your hands until all the ingredients are well combined. As you knead the mixture, the water from the vegetables will be released and moisten the mixture. Heat a non-stick skillet (preferably ceramic) over medium heat. To the skillet add a little oil, enough to coat the bottom of the pan. Form cabbage mixture into 3–4 inch patties. When oil is hot but not smoking, add patties. Slowly cook on one side for a few minutes over medium heat until golden brown. Do not cook too fast; otherwise, cabbage will not cook through. Turn over and cook on other side until golden brown. When done, remove from pan and drain on paper towels. Serve warm with Curry Mayo, Tomato Chutney, tamarind chutney or sour cream. Makes about 10 croquettes.

A warm compress made with cabbage leaves can help relieve the pain of a headache. Crush cabbage leaves, place in a cloth, and apply on the forehead. Also, drink raw cabbage juice 1-2 oz. (25-50ml) daily for chronic headaches.
