This is a simple, yet tasty soup. I love the addition of coconut milk in soups, so I created this recipe to highlight this rich and nutritious ingredient.
2 tablespoons coconut oil
1 cup chopped onions (1 medium onion)
1 tablespoon minced fresh garlic
2 cups cubed sweet potatoes (approximately 1 large; other root vegetables can be used)
2 cups chopped cabbage (about ½ small head)
2 cups finely chopped kale leaves or other leafy greens
2 teaspoons curry powder
1 (13–14-ounce) can coconut milk
6 cups water
2 vegetable bouillon cubes (or to taste)
½ cup steel-cut oats
1 tablespoon toasted sesame oil
2 tablespoons fresh lime juice
Heat oil in a medium-size pot over medium heat. Add onions and garlic. Sauté for a few minutes, then add sweet potatoes (or other root veggies), cabbage and kale. Add curry powder and sauté for a few more minutes. Add coconut milk, water, bouillon, steel-cut oats, toasted sesame oil and fresh lime juice. Bring to a boil, then reduce heat to medium–high. Cook for 30–40 minutes, stirring occasionally, until stew cooks down and thickens. Serve warm or hot. Serves 6–8.
