Summer Squash Salad

So much zucchini in the garden, help! Yes, this was the inspiration of this dish. My husband LOVES to grow food–A LOT of food. This summer we had more than we could manage, so we shared–and I came up with a few new ways to prepare our abundance of zucchini. We also had a lot of cucumbers, so I made many cucumber salads. I decided to try out my cucumber salad recipe with zucchini instead–to see if I could do sort of a quick pickle. Well, it worked. After marinating for a little while, it even ate like a cucumber. I got great reviews from the customers and they were very happy to have another way to use all of their home-grown zucchini.

Ingredients:

8 cups thinly sliced zucchini
½ cup lemon balsamic vinegar (ME’s bulk vinegar)
4 tbs. apple cider vinegar
3 tbs. extra virgin olive oil
½ cup diced white or red onions
2 tbs. fresh chopped dill (or 2 tsp. dried dill)
1 tsp. salt
Black pepper—to taste

Put sliced zucchini into a mixing bowl. Add vinegars and toss with the zucchini. Add all other ingredients and mix until well combined. The longer the salad marinates, the more flavorful it will become. Serve cool or cold.
