Cabbage is another wonderful cleansing food. It helps to detoxify the body and remove toxins. We’ve got a nice cleansing theme going on and this recipe fits right in!I love cabbage whether cooked or raw. This is an Indian-inspired dish. Cabbage, fennel and tomato go so well together. The customers loved it!
4 tablespoons olive oil, or your favorite cooking oil
½ teaspoon brown/black mustard seeds
½ teaspoon fennel seeds
¼ teaspoon crushed red pepper
¼ teaspoon turmeric
2 cups sliced onions
6 cups cabbage, finely sliced (1 small–medium head)
1 cup crushed tomatoes
1 teaspoon salt
Heat olive oil in a large sauté pan over medium heat. Add mustard seeds and sauté until the seeds begin to sputter and pop (be careful!). Add fennel seeds, red pepper and turmeric and stir into the oil. Add the onions and cabbage and cook for a few minutes. Stir in the tomatoes and salt, cover the pan and cook for about 30 minutes on medium heat, stirring occasionally. Cook until the cabbage is tender. Serve warm or hot. Serves 2–4.
